Healthy Breakfast Recipe Part 2
For this post, we are continuing with our healthy breakfast recipe journey. The recipe I will explore in this post is one of my absolute favourite breakfast foods and I often find myself having this for a Sunday morning brunch. In this post, we will be exploring Shakshuka, a Middle Eastern and North African healthy breakfast dish. Similar to the second post I will look at how to make the recipe along with the ingredients, then at the end, I will rate the recipe based on my student-friendly checklist.
How to make Shakshuka
Dice an onion and red bell pepper then add to a saute pan with olive oil on medium heat
Stir the vegetables until the onions are translucent
Next, add the garlic, and spices and stir for another minute until they are fragrant
Pour a 28-ounce can of whole peeled tomatoes and use a spatula to break up the tomatoes in the pan
Once the mixture is simmering use your spatula to make little holes for the egg
Crack the egg into each hole, reduce the heat to low cook for another 5-8 minutes

2 tablespoons olive oil
1 medium onion, diced
1 red bell pepper, seeded and diced
4 garlic cloves, finely chopped
2 teaspoon paprika
1 teaspoon cumin
¼ teaspoon chili powder
1 28-ounce can of whole peeled tomatoes
6 large eggs
salt and pepper, to taste
1 small bunch of fresh cilantro, chopped
1 small bunch of fresh parsley, chopped

This recipe got a 3/5 rating. From personal experience, I find that it can take about 40 minutes to make Shakshuka. In addition, the recipe does not allow for a lot of substitutions therefore it lost a point. Overall this is a great healthy recipe that may be perfect for a weekend or even a day with a late class!

Reflection
Ending this week with my second breakfast recipe, I hope to head on to lunch recipes for next week. I am enjoying the process of researching and finding different recipes that are healthy and student-friendly. My final product will be a ranking of the recipes I have gathered based on the student-friendly ranking checklist. I hope that this blog will help some of my fellow students find interesting, healthy and student-friendly recipes to add to their day-to-day lives.
