Can Quick and Easy Lunches be Healthy?
As we continue on our culinary journey through healthy recipes, I would like to move away from breakfast and go on to lunch. Lunch is a meal that I rarely eat and only tend to make on the weekends due to time constraints. During the week, I am either at work or going between classes, and I often find it hard to find time to prepare a meal, much less a healthy meal. I hope that the recipe I share this week is something that will become a lunch regular for me.
This week, I'll be exploring an egg roll-in-a-bowl recipe for lunch.
One of my all-time favourite recipes, I frequently prepare it on a hectic weekday for the next few days' lunches.
Ingredients
The ingredients for this recipe are simple and do not require anything fancy, expensive or hard to find.
The ingredients for this recipe include:
A bag of coleslaw mix or shredded cabbage if preferred; you can add onions and a few other fresh vegetables if desired
Ground meat of choice (I personally use lean ground pork since I prefer the consistency and flavour compared to ground chicken or beef.
A simple stir fry sauce made with soy sauce, garlic, ginger, rice wine vinegar, and sesame oil (i like to add some hoisin sauce int his recipe I think it adds a nice flavour)
Ingredient Quantities
• 1 lb. ground turkey breast (can substitute with ground chicken, ground beef, or ground pork)
How to make
This recipe is super easy to make and only requires one skillet or pan to cook with. The recipe should only take about 25 minutes to make.
In a large skillet over medium heat; add the ground meat and cook, stirring until the meat is fully cooked. Drain; return the meat back to the skillet
At this point added diced onions if wanted if not avoid this step
Add garlic, ginger, soy sauce, sesame oil and rice wine vinegar, hoisin sauce (optional), coleslaw mix and any other added vegetables to the pan. Cook and stir constantly for about 5-7 or until cabbage is wilted
Remove the skillet from heat. Add any extra seasonings or toppings; portion and serve
