Using Leftovers for Healthy Lunches

 Continuing on the journey through healthy lunch recipes, in this post, we will explore vegetable turkey soup. Coming into the Thanksgiving/Christmas season, I know a lot of us will have no idea what to do with that leftover turkey since there are only so many turkey sandwiches a person can eat. Soup is a super versatile food that allows for a ton of substitutions from the type of stock you use or the vegetables you put in.



Ingredients 

There are a ton of different spices you can use for this soup recipe. The favourites I tried out were salt, pepper, paprika, garlic powder, and some thyme.

The beauty of soup recipes is that you can use whatever vegetables you have on hand. less on hand. Some of the vegetables I used were onions, celery, and carrots. I also added some dried lentils as well.

 

Ingredient Quantities

  • 2 tablespoons of butter 

  • 1 cup of sliced carrots

  • 1cup of chopped celery 

  • ½ cup of  chopped onion 

  • 43.5 ounces of broth I used chicken broth

  • 1 cup of water  

  • 1 cup of pasta of choice, uncooked (I used bow tie pasta)

  • 1-2 teaspoons of fresh or, 1.4 teaspoons of dried 

  • Salt to taste 

  • Ground black pepper to taste 

  • ¼ teaspoon of garlic powder

  • (all the spices can be changed and suited to personal preference)

 

How to make 

  • In a large pot over medium-high heat, melt butter. Add carrots, celery, and onions. Cook until the onions are translucent and the veggies are soft. Add the broth and water to the pot. Bring to a boil and continue to cook for about 10 minutes.

  • Add the noodles, turkey, thyme, garlic powder, salt, and pepper. Then return to a boil and cook for an additional 10 to 12 minutes, or until the noodles are cooked. Serve in bowls while still warm.
